Kid-Friendly Protein-Packed Granola

Kid-Friendly Protein-Packed Granola

Ingredients:

- 3 cups old-fashioned rolled oats

- 1 cup unsweetened shredded coconut

- 1/2 cup sliced almonds

- 1/2 cup pumpkin seeds

- 1/2 cup sunflower seeds

- 1/4 cup chia seeds

- 1/4 cup flaxseeds

- 1/4 cup honey or maple syrup

- 1/4 cup melted coconut oil

- 1 teaspoon vanilla extract

- 1/2 cup dried fruit (such as raisins, cranberries, cherries, blueberries, or chopped apricots)

- 1/2 cup mini chocolate chips (optional)


Instructions:

1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

2. In a large mixing bowl, combine the oats, shredded coconut, almonds, sunflower seeds, chia seeds, and flaxseeds. Mix well.

3. In a separate small bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract until well combined.

4. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.

5. Spread the mixture in an even layer on the prepared baking sheet.

6. Bake in the preheated oven for about 20-25 minutes, or until the granola turns golden brown, stirring halfway through to ensure even baking.

7. Remove from the oven and let the granola cool completely on the baking sheet.

8. Once cooled, stir in the dried fruit and mini chocolate chips, if using.

9. Transfer the granola to an airtight container and store at room temperature for up to two weeks.


This protein-packed granola is not only delicious but also provides a nutritious snack for kids. You can serve it with milk, yogurt, or eat it as a standalone snack. This is also a great recipe to make with your kids ... they won't even know that your also sneaking in a little math and science in on them. ;)
